

The Milk Market Summer Salad
This summer salad recipe was provided by Peter Ward of Country Choice, located at the Milk Market’s new Food Pavilion.
Ingredients
One head Romaine or cos lettuce.
· 2 dry cure rashers.
· 3 anchovies.
· 50grms grated Organic Reggiano Parmesan.
· 2 slices stale white bread crust removed.
· 50 Cl. Italian ex. Vir. Olive oil.
· Pinch of fresh Thyme.
· Country Choice Caesar Salad dressing.
Instructions
· Wash and dry lettuce and lay flat on a platter.
· Cut bacon in cubes and quick fry until crisp.
· Cut bread in cubes and flash fry in oil adding Thyme at the end.
· Wash and pat dry the Anchovies.
· Place the Bacon pieces along with the bread on the lettuce. Sprinkle the reggiano over this.
· Put some Caesar dressing in a plastic sandwich bag. Pierce the corner and pipe the dressing in criss-cross fashion.
· Lay the Anchovies on top.
